The great thing about shooting food is that you get to eat it as well. So when I got the call from Nora Jumpscott, Director of Marketing at the Founders Inn, to photograph new menu items for the resort, it was a no-brainer! Chef Joseph Elliott, a native of Pittsburg, is the new chef at the Founders Inn, bringing culinary innovation like never before. Before the shoot, Chef Elliott took my assistant Beau and I on a personal tour in kitchen. Shortly after, we found ourselves munching on the buttermilk fried lobster skewers and prawns! What a tough life!! My personal favorite is the Grilled Filet of Beef and Day Prawns, accompanied with Chive Potatoe Puree, Smoked Shiitake Mushrooms with a Mojo Red Wine Sauce. if you're looking for a wine of choice, you can't go wrong with the 2003 Lacatus "Tempranillo". Other items to sample are the Chesapeake Blue Crab Cakes, Seared Rock Fish, Day Aged Rack of Lamb, Apple Cider Glazed Rotisserie Poussin and the Cavatappi Pasta. If you're looking for some great food where professionalism is of the highest standard, dine at the Swan Terrace. Tell them Keith sent you. You won't be disappointed!!
